Getting ready for Thanksgiving........

Libby's Pumpkin Roll (this is so yummy, I make it all the time)

Ingredients:

CAKE -
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup LIBBY'S® 100% Pure Pumpkin

FILLING -
1 pkg. (8 oz.) cream cheese, at room temperature
1 cup powdered sugar, sifted
6 tablespoons butter or margarine, softened
1 teaspoon vanilla extract
Powdered sugar (optional for decoration)

Directions:

FOR CAKE: PREHEAT oven to 375° F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar. COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts. BAKE for 13 to 15 minutes or until top of cake springs back when touched. (If using a dark-colored pan, begin checking for doneness at 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

FOR FILLING: Beat cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.

COOKING TIP:Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.

Christmas Journal

I am so excited that it is almost that time of year again. Time to Journal my Christmas. I did this last year and let me tell I enjoyed the season last so much more than I have in years before. I just thought about things more and enjoyed my time with my family more.

Lots to talk about

Well I have had a busy day and it will gone on into the week.

So today....

I did a load of wash and the toilet bubbled, filled up and then the tub filled up with a couple inches of water. After draining the tub I washed my hair in the faucet and the toilet filled up and up and up, ya it didn't stop, kept flowing right onto the floor.
So then my sister Dani, my mom and I went the 'Festival of Tree's craft fair'. It was so crowded. We all then went to Olive Garden for lunch. Both Dani and I don't get to go often cause our hubbies don't like it. Dani and I went to pick our kids up from my dad, I guess Wyatt had been crying off and on for awhile. I get there and he was burning up. Had a temp of 103- 104. He was so sad and tired. He fell asleep as soon as I got home and had him in the bed. He is doing better now.
So a plumber friend stopped by to look at the clog. Yea i now have a hole in my back yard big enough to hide a person in. But he unclogged the clog. YEA!
Ahh and all this while derek is gone for the weekend.. so sucks..

But on a good note....

On derek's way home tomorrow he is picking up my boys, Ryan and Zach. YEA! They will be with me for the whole week. Should be fun. Then on Wednesday my son , Colton, will be coming over and then Derek will leave for the weekend. So it will be just me and the four boys alone for the whole weekend.

So......

Our menu this week will be easy pleasing dinners.

I have been working on my shopping and i know what I am getting each person. Some things are already bought.

Crabbing and Scrapping

First here is our new boat. Derek has taken alot of time on it and added a fish finder, stereo and the pedestal seats in front and back.

As you can see I still have several things on my list from the last several days, some will just be when I get a spare moment and I can get to them. Yesterday I got nothing, but the dishes done. I took Wyatt to our friend, Candy's, for the day and I decided with my time alone I would go shopping and also ended up seeing a movie, Role Model, with my sister Dani. So I didn't get home till 6 right in time to make dinner and watch shows.

Wyatt's Wish List

So Wyatt's has been going threw toy books saying I want this and this and this so I decided to sit with him and he picked out what he wanted. I cut it out and he pasted it down. I put some definitions on some of them so everyone knows what they are. He had alot of fun and just actually brought it up to me and said he needed to put stuff on the back, hehe.

So yesterday i got a call from my friend Candy, her daughter was getting married that night and they were trying to set up the convention center for a reception for afterwards. She needed some help so she didn't go insane trying to finish it all with the little time she had left, so I jumped in my car and helped her out for 3 hours. So I didn't get alot done on my list because right after that I came home and finished dinner and then Tom and Ester came over to eat with us so the rest of the night was shot.
So here is my list for today, hopefully it all gets done...

Crabbing!

So my husband bought a new boat for fishing and duck hunting. To break it in Derek, Wyatt and Troy took the boat out for a day of crabbing. Wyatt had so much fun. He loved it and did really good I guess. I on the other hand got the day off, yea me.

Family fun and a birthday

So Thursday night was a family fun night at Chuckee cheese through Lizzy and Wyatt's preschool. Since it was just Shirley's, my niece, birthday we decided to celebrate it while there. We had lots of fun and got lots of crappy toys with our tickets, hehe.

On a side note- I HATE BEING SICK! Just thought I'd share that. I am not so much sick as I have a really really bad cough and pretty much every time I breathe in it makes me cough. aaarrrgggg!!

Wyatt's Halloween

So as most of you know i spent my Halloween night in the hospital with my sister Dani while she gave birth to her daughter, Abigail Marie. So while I was there our friend Ali and her older sister took Wyatt trick or treating several different places. I got home pretty late that night so these pictures are from the next morning.
