Hello I just wanted to share this yummy dinner we had the other night.
Country Chicken Casserole
3 C shredded hash browns
1 (6 0z) can French- fried onions
1 C shredded cheddar
4 Skinless, boneless chicken breasts, cut into bite size pieces
1 can Cream of chix soup
3/4 C milk
1 (15 oz) can corn ( I didn't add the corn)
Preheat oven to 375. Stir hash browns and 1/2 the onions together in a 9x13 inch baking dish, then lay cheese on top and layer chicken over cheese. In a small bowl mix soup and milk together and pour oven chicken.
Bake in preheated oven for 30-35 minutes, or until chicken is cooked through and juices run clear. If you are using corn, pour oven chicken and stir to combine all ingredients, then bake an additional; 20 min. Or until done.
Sprinkle remaining onions over all and bake for another 5 min, or until onions are golden brown. Let sit 5 min before serving.

Chicken casserole usually wouldn't sound very enticing to me, but I have to say, this recipe sounds so good! Hash browns and cheese? Yes please! I will have to try it. Thanks!
this recipe was sooo good. definitely making it for eric when he gets home.
