Menu

So here is my menu for the week and my To Do for Monday.

Soy Marinated Flank Steak, Salad, brocolli

Sausage Pancakes, eggs

Cowboy Casserole w/ fritos, salad

Wed- Sliders (mini burgers), Yam fries (The people over to play new UFC game)

Stroganoff, salad

Sat- UFC fight night

Dessert this week- Peanut Butter Truffle Brownies

Menu Plan Apr 26- May 3

So what's on menu this week? For more meal ideas head on over to Org. Junkie for hundreds more ideas.


Stuffed Meatloaf, mashed potatoes, corn

Steak Sandwiches, sweet pot. fries


Country Fried Duck, hashbrowns, eggs

Slider Burgers, fries

White Chicken Chili

Shrimp and Grits, corn, sweet tea

Crisy Oven Fried Mexican Chix, mexican rice, brocolli (not done last week)




Crispy Oven Fried Mexican Chicken

1 c. low sodium mixed vegetable juice
1 1/2 c. corn flake crumbs
1/2 tsp. each salt, pepper, chili powder, paprika, oregano leaves, ground cumin
1/4 tsp. hot sauce
2 1/4 lbs. chicken skinned (can use boneless chicken breast or turkey)
1 tsp. garlic powder

In a large shallow pan (not aluminum) combine veggie juice and hot sauce. Add chicken and let marinate for 30 minutes at room temperature or cover and refrigerate 3 hours. Turn chicken frequently. Drain chicken, discard marinade, preheat oven to 375ยบ. Spray baking sheet with non-stick cooking spray. In a large plastic bag, combine corn flake crumbs and all the spices. Place chicken in a bag a shake. Sprinkle any remaining crumbs over chicken. Bake until chicken is tender and crisp. Chicken parts about 1 hour (whole). Chicken breasts about 35 minutes (boneless).

Opening Day

So today started several months of cold early mornings for my husband, opening day of duck season. Lat year was a total bust, but maybe this year will be better. Wyatt did not like him being gone all morning though, but was excited to see the goose he brought home. And he loved cleaning guns with daddy later that night. He really does just want to be like his dad.

Eww! And yes Wyatt did wash his hands immediately after touching that thing.

So next is my menu for the week. I will be gone sat and sun next weekend so the menu is a little short this week. I have made this Greek chicken before and it is so moist and yummy don't know why I waited so long to make it again.

~Homemade pizza

~Jambalaya, w/ brown rice

~Italian cream cheese chicken over pasta, garlic bread

~Greek Chicken, garlic roasted potatoes, Cesar salad

Meal Planning



So I have been laking on the meal planning the last couple of weeks due to camping and my retreat, but I need to get back on it. We eat out to much if i don't have anything planned. I am doing this early because my Sunday meal is in here too.

And the best place to find lots of meal ideas is over at Organized Junkie. There are over 300 bloggers who post their menus every Monday.

I also need to get some kind of system going on cleaning my house. I do not like having everyday completely planned out, that is just to much planning and drives my nuts, but I need to do something. So any ideas on what you do would be very helpful. My sister, Beth, has painted her fridge with chalkboard paint and puts her to do list on that everyday. I would post a picture, but (hint hint) she has not put one up on her blog yet. Hmm maybe that should go up on her fridge. LOL Love you Bethy.

Menu Plan Monday

You have to try a recipe from last week the Buffalo chicken lasagna, all I can say is YUMMY. We all loved it, even my 'never likes anything' 3 yo. liked it.

So this week I have several appointments; an eye exam, WIC, dog to the groomer, set up school for 3 yo and then we have a bday party on Saturday. So this week shouldn't be to bad, but I do only have 11 days left till I leave on my retreat, YEA, so very excited so I need to take some time and go through all my stuff and get lots of pics developed.

The wedding yesterday we went to for our really good friends was great, Derek (hubby) got too drunk, but what else is new. I will post a few pics in my post tomorrow.

Tonight we are heading over to my sister's house so the husbands can watch the UFC fight, the guys get together every fight. Got lots of great food to eat and my hubby of course is so hung over he doesn't even want wings (now for all of you that know him know that is major).

Ok that was alot of rambling so here is my menu for the week. Some new recipes and some nice easy ones too.

~Easy and delicious chicken over pasta w/ broccoli

~Steak Stir fry (peppers and broccoli) w/ brown rice

~Country Chicken Casserole w/ grilled green beans

~Ground beef stew over garlic mashed potatoes

I'm back.....


Well now that my sister and her kids are gone it is time to get back into the swing of things again; cleaning, laundry, blogging, working and meals. Ahh it was a nice time off, but I am ready for some order again. I didn't get to much scrapbooking either, just never quit felt like it, but I hope to get back into that because I have lots of pictures from the summer so far.

Menu Plan Monday

Ok so it's not Monday, but I have been off on my menu planning and now that my dear husband has been working out and eating healthy, I figure I better start making menus again so I can watch what we eat a little better.
I am so proud of this man, he was a burger (ok 2 burger) and fries kind of guy and he made this change and has stuck to it. Now before I met him, while he was in the Marines, he used to eat healthy and was way into body building so it's not new for him, just has been a long time.

So this is the menu through next weekend.

-Rosemary Chix w/ white beans, salad

-Steak, Herbed Zuchinni noodles

-Spicy Thai Shrimp , brown rice

-Turkey burgers, Homemade fries

-Meatloaf, mashed potatoes, salad

-Fish, scallops, veggies, Saffron rice

-Left overs

-Eat out one night (it never fails so I might as well plan for it)

OK so I am doing this next weeks menu early, but it is because it will include this weekends meals also. these are in no particular order either, I usually will just do a meal that works for that day.

meals and a word...

I always talk about doing things, excercise, cleaning on schedule, mealplanning, planting a veggie garden, making all my cards, my list here could go on & on.... So I chose one word to try and strive for through out the year, this year I wanted to use one that would help me get all this done. I think with such a big task one word isn't enough so I picked 3--JUST DO IT! I hate that it is a nike phrase but it fits to a tee. If you want to pick a word to help you achive something this year visit Ali's blog to get your words flowin.
Now I just need to think of something to do to help me remeber this, not sure what maybe some kind of wall art to put on my craft wall. I'll let you know.

I am hoping that this will encourage me to do what I want and just get it all done.

So sticking to my word here is my meal plan for the next week and a half.

Menu Plan Monday


Well I have been bad and haven't done this in a few weeks and it shows, we have eaten alot of junk and eaten out. Alot of 'I have no clue what's for dinner'. So I have to get back to it espically this week, I am sure it's going to be a crazy one.

Mon- Steak, twice baked potatoes, green beans

Tues- Christmas dinner (not sure yet what we are doing)

Wed- Pork chops, stuffing, corn
Thurs- PepperJack Chicken, Rice roni and creamed corn

Fri- Hamb. Helper and rolls
Sat- Creamy Crockpot chicken and rice, salad

Sun- Meatloaf, mash. potatoes and green beans

Menu Plan Monday

So last weeks menu was pretty simple so I don't have much to say about it, we did eat out twice, which was kind of a bummer so we didn't eat the white chicken chili so that will be moved to this weekes menu. Alot of my meals this week came from Amy over at Too Many Recipes, check it out she has some great recipes. Also if you want lots of menu ideas check out Laura over at Organized Junkie.
And here is a layout I did with some pics of Wyatt outside. He was so funny he didn't stay still for to long so all of the pics are of him running, so that kind of ended up being the theme behind this layout.

A menu and some scrap stuff......

So yesterday was alot of fun we had 3 couples over to watch the seahawk/rams game. We had lots of food and luckily most of it got eaten, espically the mini pigs in blankets (should have made more) Another big hit was the little smokies in the crockpot. I found this odd recipe and was a lttle scared but they were soooo good. Here is the recipe if you'd like to try them out. Ok that didn't work I tried to find it back on all recipes but couldn't, that's ok it's reall easy-

1 C grape jelly

1 C ketchup (now some used 1/2 C of this with BBQ sauce)

So now for this weeks menu

-Pork roast, roasted garlic potatoes, corn

-Tuna melts

-Steak sandwiches on hoggie rolls, fries

-White chicken chili
-One leftover night

-I need one more meal. but I'm sure it will end up being an eat out night.

Went to a all day crop this saturday (12-12) and this is one of the things I worked on, it is just a Folder with the pockets on the inside that you use for school.

What a weekend, MPM

Wow what a weekned my Dh and I went away with no kids for the whole weekend, so relaxing not having to chase after a two year old all day. Now on this little adventure I did go see my 11 and 10 yo play football on saturday. So I have lots of pictures to share, TFL.



Now Zach's are the first set, it was nice he lost his jersey so he had to wear his practice one so he is the only one in all white. Seen here tackling.



And Ryan is #39, he is a little harder to tell on the action shots but he has no red sleeves like the others do.
They did a great job, both of them. It was very hot that day burnt my face a little. So now on to MPM. A few are from last week things we didn't get to before we left for the weekend.

MPM

Here are a few cakes I made for a friends daughter's birthday party and the invite I made them also.





OK so I am doing this kind of early, but it's because when I did my two week menu I really didn't acount for the weekend. So this is what we will be having till next Sunday the 14th. For more menu ideas on Mondays check out Laura's site.


-Sunday night we will be at my parents house for my Aunt Marjie's taco salad

-Thursday night thru Sun. afternoon Dh and I will be out of town, yea a little break( the guys are dirt biking and I will be scrapbooking and driving to Yakima watching 2 of my sond play football)

-Tacos

-Catfish Parmesean, corn, noodles

-Pepperjack chicken rolls

MPM


So not much has been going on this week. Trying to stay home and not spend money. We are pretty tight with our last money coming in, it wasn't the greatest (at least the bills our paid and we can eat) God has really been good to us since DH startd his own business. So to not leave the house to much I decided to do a two week menu plan instead of a week. Figure if I need to get out of the house then we will just have to freeze it out at the park (brr it sure is getting cold here)

Plus we are hopefully taking a dirt bike trip the second weekend of October so I'd like to have some money for that too.


So here are a meals for the next two weeks. I don't set a specific day for these. It is just easier for me to decide that day which one I will make.

-2 days for leftovers

-1 free night (we sometimes make meals w/ friends so I like to leave a night open for this)

-Oven fried Chicken Chimichangas, refried beans

-Chicken over biscuits

-Pulled pork sandwiches, fries


-Breakfast for dinnner (pancakes, sausage)
-Meatloaf, cheesy potatoes

-Homemade Chili w/ fritos
-German Style pork chops w/noodles
* As a note these are the best. They are so good. Yummo!!!
